Goat Cheddar & Kale Pizza with Gluten-Free Crust

Hi All,


Welcome to another food post that is oh so glorious in goodness, my Goat Cheddar Pizza with Rich, Green Kale sprinkled with Lemon Juice topped on a Gluten-Free Crust.


I'm glad I don't have to say, good food is hard to come by, because honestly, it's not... There are so many delicious places to dine and gather whole foods all around the states, so it's a blessing that it doesn't take climbing a mountain to attain it. However, there's nothing like making pieces here and there (or for me, very often) at home!


To gather your goods from the market- the honey, the grass-fed butter and meats, crisp apples, and make concoctions with them is a gift like none other that one can only be truly grateful to Jesus for. In this case, the goods were goat cheddar cheese (so delicious), dinosaur kale, a frou-frou marinara sauce, and a simple crust.


Don't be afraid to try new things friends, because YOU have no idea what you're missing if you don't...


INGREDIENTS/RECIPE FOR CRUST

For the recipe, I used Healthy Recipe's as a base and made it my own:

4 Eggs

Water

Garlic powder

Italian seasoning

Onion powder

Coconut flour

Good ol' sour cream (full- fat); I didn't use the full 6 tablespoons


If you know anything about me, know this: I LOVE GOOD, HEALTHY FATS! Yes ma'am, I do. They make you plump and with the addition of exercise, toned. I used sour cream instead of the parmesan, I believe, as that's what I had on hand and it worked perfectly fine.


Follow the recipe as is, except for the parmesan part, if you'll be using sour cream. Add in sour cream on step 3.


FOR THE SAUCE

I used a delicious and effortless in flavor marinara sauce, Mezzetta Parmigiano Reggiano Marinara! I love a creamy tomato sauce, partly due to the limited amount of tomato products I can consume and if I do, making sure I dilute it, but also, for the taste. Cream with tomato is a match-made in heaven. The sauce just added more comfort and warmth to the soul, which was a great addition.


FOR CHEESE

I used a goat cheddar cheese that had a sharp taste and was made with local milk, which I knew would be delicious when melted. I've been trying to make my tastebuds like goat cheese, trust me, it works- I did it with coconut water and now, I LOVE it! For the cheese, go to your local farmer's market and see what they have available. If it's goat cheese, get it and if it's gouda, get that. Putting your pizza on the broil setting on your oven for a few minutes before the end of its cooking time gives the pizza a beautiful dark golden, bubbly pizza look.


TOPPINGS

I used dinosaur kale, which made the pizza even healthier!


I baked my pizza (crust was already precooked per instructions of pizza crust recipe- link above) with the sauce, cheese, and kale at 365 degrees, I believe- I didn't broil it per the link's recipe. You can broil the pizza a few minutes before it being done as said above.


Sprinkle with fresh lemon juice.
