Trio Salad featuring Applewood Bacon, Avocados, and Fresh Corn off the Cob

Hey Y'all!


How's y'all doing? I pray all is finding you well in this crazy world we are living in, which couldn't be more truer than right now. With all the craziness we encounter in our daily life through our jobs, bombarding advertisements, and the list that will go until we get to eternity, it's nice to be able to unwind with a nice glass of shrub (fruit, unrefined sugar, and vinegar/s) in my kitchen! This salad, friends, is nothing new under the sun... filled with healthy fats, delicious flavor, easy on the stomach due to the pairing of a simple lime vinaigrette, you'll be sure to have this in your weekly meal planning schedule.


If you're wondering, I'm still enjoying an extremely limited sugar lifestyle! I feel so much better and can notice a difference. There's more room in my tummy for water and whole, delicious foods. Guys, when you remove the sugar, you start to savor food. I hope you savor this salad that's easy on the tummy and oh so tasty!


WHAT MAKES THIS SALAD POP:

Applewood Bacon

-You'll want to use a thick-cut, smoked bacon with a lot of flavor. Although, I'm avoiding sugar, I'm not avoiding goodness. Pure goodness like some good ol' bacon *cough, cough* in moderation. Try going to your local farmer's market for a specialty item like this. Our farmer's do the nitty gritty in getting good quality meat to go on our tables and into our familys' bellies, SO the least we can do, is help farmers out.


Avocados

-Use a mixture of almost ripe and ripe to give texture and creaminess.


Corn off the Cob

-Yes, you read correctly... Corn off the Cob, not on. Corn sliced off the cob leaves you with a super fresh and oh-so delicious addition to any salad! I LOVE IT! Use a sweet, combination of yellow and white kernels, corn for this recipe. You can't go wrong, trust me.


Lime Vinagrette

The zesty tartness of this vinaigrette balances out with the sweet corn and makes the salad savory.


RECIPE FOR SALAD*

Applewood Bacon, thick-cut

Corn sliced off the Cob

Avocados, good-sized slices

Yellow onion, 1/2 and cut into thin to medium slices

Optional: Eggs, farm-fresh y'all


RECIPE FOR LIME VINAIGRETTE*

Lime juice

Grapeseed Oil

Garlic Powder

Salt + Pepper

Optional: Raw honey


*Measurements are based completely off of your family's needs and wants- use however much of each ingredient you know your family loves or step out of your comfort zone, and try something different!


INSTRUCTIONS

Bake bacon in preheated oven at 375 degrees in a lightly greased baking sheet pan. Flip bacon over when one side is done. Once both sides are done, place bacon strips on a paper towel- lined plate. When they are cooled, break into good-sized pieces.


In a bowl, add your corn, onion, bacon and toss. Then, add your avocados and eggs, if you'd like, on top (since avocados and eggs can leave salads a mess when tossed).


In a small bowl, add just enough oil and a lot of lime juice. Sprinkle your seasonings and drizzle of honey (optional), and whisk. Once thoroughly mixed, pour generously on salad and enjoy!
