Bottom of the Barrel Fridge Meals: Sautéed Cabbage & Sausage

It has been such an interesting time in our country and many things are changing, and it's not for the good. Many people are struggling financially, physically, and mentally. I know for my family, we are trusting Jesus Christ daily, because we need Him daily. We don't have all the answers and that's why we are seeking Him. This is the season to truly believe Abba for what you need.
With all that being said, I pray this meal series blesses you and yours. It was created to give you delicious meal ideas with items that NEED to be used up in your fridge. Some of us have made the intention of using up what we have and not wasting ANYTHING before Jesus. Yes, I have failed at this at times, but I will get better. Others, have no choice but to use up what they have, because there's no money coming in. We are all learning something in this season, but we are also growing. Be encouraged today and get cookin' with what you got!
MAIN INGREDIENTS WE ARE WORKING WITH:
Oil + Butter (Water can be used, as well)
Cabbage
Sausage
Peppers
Onions
Salt + Pepper (if you have more spices in your pantry, please add! Because this is a Bottom of the Barrel Fridge Meal, I try to keep things simple; it's no other way when you're at the bottom of the barrel, lol!)
THE SAUSAGE:
My mom bought the BEST Italian pork sausage and it's literally the BEST! They had such an amazing flavor, which made this meal truly fulfilling. They came in a pack of four and I only used two, because I didn't want an overwhelming amount of sausage. I wanted the cabbage to be the main feature.
Rinse your sausage and dry off with a paper towel. Then, chop your sausage into slices. Place a small amount of oil in a preheated cast iron pan over medium-heat and once hot, add sausage. You can season them with garlic powder and herbs or if they come seasoned, with nothing at all. Cook them, until you've reach desired doneness. Once cooked, put on plate.
THE CABBAGE:
Chop up head of cabbage into good-sized pieces. Fill sink with warm water leaning more towards the cold side than hot, and add cabbage pieces to soak. This will get rid of dirt, buggies, and anything that might not be tasty. Swirl around and let soak for 10 minutes.
After 10 minutes, place cabbage in colander, drain sink, and rinse. Dry off somewhat with paper towels. The extra water will help cook the cabbage in the pan.
I chopped up a small assortment of peppers (any will do for this recipe, I personally love the green kind) and placed them in the same pan I cooked the sausage in to reuse those good oils and flavors. I added just enough oil to help aid in the cooking process for the next steps. If you don't have oil, use water to sauté. As the water evaporates, add more water and cook as normal. There will be a different flavor than using good ol' oil, but use what you have. Also, chop up an onion (I used a half of one) and add to the peppers. Sautee until fragrant, then add butter! Butter truly makes everything better.
Add your cabbage to the mix, and give everything a good stir. Your kitchen and house should be smelling really good right now! I turned up the heat a bit when I added the cabbage and as the liquid in the pan evaporates, I turn down the heat. If too much liquid evaporates since no lid is placed on this dish when cooking, add water or broth in increments. Don't be afraid to mess up when learning to cook with a new kitchen item such as a cast iron pan, just get cookin' and start burnin', yes, I mean the pan sometimes. It's how we all learn. BUT, knowing tips on how to not make the sometimes all the time is very helpful! Once cabbage is nice and tender, but still offers a crunch, toss sausage in and stir. Let cook for a minute or so since the sausage is already done. We want all the flavors to meld together. Season with salt, pepper, italian seasoning, extra dried basil, garlic powder, and you're done!
